Terroir
The vines average 30 years old and are planted on Kimmeridgian clay-limestone marl soil facing south-east. The climate is characterized by long, harsh winters,
unpredictable springs and hot, sunny summers.
Vinification
Mechanical harvesting. Pneumatic pressing. Drawing off and placing in temperature controlled stainless steel vats. Natural alcoholic and malolactic fermentation in
stainless steel vats.
Ageing
9 months in stainless steel tanks.
Tasting Notes
Intense notes of lemon, grapefruit, green apple, and white flowers on the nose. The palate is crisp and direct attack, pure with an elegant texture. Marked saline
persistence and typical Kimmeridgian minerality on the finish.
Food Pairing
Shellfish, Seafood, Aperitif. Serve at a temperature of 10-12C.
